Merdiya Washing Station, operated by Testi Specialty Coffee, supports about seven hundred fifty smallholder farmers in the Refisa area of the Nensebo district. This lot is a landrace Typica variety grown above two thousand meters. Testi maintains a strong presence in the surrounding communities with a particular commitment to expanding educational access for farmers and their children.
Merdiya uses a slow, closely monitored fermentation approach that elevates the region’s traditional washed process. After picking and sorting, the coffee is depulped and fermented for one hundred hours, with fresh water introduced every twenty four hours and tank temperatures held steady between eighteen point five and twenty point five degrees Celsius. Once washed, the parchment dries on raised beds under parabolic shade for about fifteen days, creating a clean and expressive profile true to its origin.
